When I choose export, from the file meu, I can only export the task(s) within the current folder.... Is there a way to export ALL tasks and ALL folders or even just ALL tasks?

Yes you can.
Just hide the folders tree (menu Options | View tree or click on "View tree" button on toolbar)
Next you may select all tasks and export them into specified folder.
