File Monitor

I have multiple file monitor tasks which watch for files in specific folders and logs them to a text file which is then emailed. I have two questions. Is there a way to stamp the date and time the file was placed there next to the file path? and right now the email is sent attaching the log file, is there any way to have the contents of the log file placed into the body of the email?
